Diabetic

eggs, separated (room temperature)
1/2 c cold water
3 Tbsp liguid sweetner
1/2 tsp vanilla
|

Tbsp lemon juice
3/4 tsp cream of tartar
1 1/2 c sifted cake flour
1/4 tsp salt |
Beat egg yolks 5 minutes until thick. Combine water,
sweetener, vanilla and lemon juice; add to yolks. Beat 10 minutes until thick and fluffy.
Beat egg whites until fluffy. Add cream of tartar and beat until stiff peaks from. Fold
carefully into yolk mixture, folding in gently. Pour into ungreased 9 or 10 inch tube pan.
Bake in slow 325 degree oven for 1 1/4 hours.
Each serving equals 1/2 bread exchange and 1/2 meat exchange. |

Cooking
spray
One 8-in flour tortilla
1 egg
1/2 c. drained and rinsed canned black beans |

Tbsp. shredded part-skim mozzarella cheese
1/4 c. Homemade Salsa (see page 148) or prepared salsa |
1. Spray a small skillet with cooking spray. Add flour
tortilla and heat over low heat for 4 minutes or until crisp.
2. Break egg into center of tortilla. Cover and cook over low heat for 5 minutes or
until egg is partially set.
3. Add black beans; distribute around egg. Cover and continue to cook for 5 minutes
or until egg is done. Add cheese and cover briefly to melt.
4. Serve topped with salsa.
Makes 1 serving
Per Serving: 406 calories, 54g carbohydrate, 23g protein, 11g fat, 4g saturated fat,
221mg cholesterol, 462mg sodium, 10g fiber
