Here is a peek at what is in this cookbook...

"Ruth Fundingsland developed type 2 diabetes later in life. Passionate about living, Ruth made every effort to manage her diabetes. She cooked healthier meals and exercised regularly. The development of visual problems, however, made it difficult for her to read recipes.

As a result, Ruth's family began rewriting her recipes in larger print. They also helped modify some recipes to fit her new diabetes meal plan. At the time, there were no cookbooks on the market that made smaller servings for people living alone or that were printed in larger type. So Ruth started encouraging her granddaughter Jackie to write a diabetes cookbook with recipes for one or two servings in larger print... and here it is. We--Jackie, Marcia, and Jane--finally came up with a cookbook designed for people like Ruth and people like you. Whether you live alone, cook for two, perfer larger type for easier reading, or need a larger print cookbook because you have more serious visual problems, this book's for you."

"Whatever your lifestyle, you'll find the perfect assortment of recipes and ideas for any day of the week. In fact, our breakfast recipes are so easy and delicious, you may want to try them for lunch, dinner, or a snack."

"Stevia is an all-natural herbal sweetener up to 300 times sweeter than sugar. It contains no calories, no artificial chemicals, and no carbohydrates. It can be used by everyone, even diabetics and children, won't promote tooth decay, and is great for cooking and baking. So why doesn't everyone use stevia?

Good question. Used for centuries in South America and the most popular non-caloric sweetener in Japan, stevia has been unfairly targeted by the FDA. Read more about the controversy in Chapter 3.
